Origin and appearance:

Fennel is a vegetable that belongs to the umbellifer family and originates from the Mediterranean region. It has a bulbous base with delicate stalks and feathery green leaves.
The bulb has a pale green to whitish color and is structured in segments, similar to an onion.
Properties and use:

Fennel has a sweet, aniseed-like flavor and a crunchy, juicy mouthfeel. It can be eaten raw or cooked and offers a variety of preparation options.
The tender and aromatic vegetable is ideal for salads, as a garnish for fish dishes, in soups or as an aromatic ingredient in pasta dishes.
Nutrition and health:

Fennel is rich in fiber, vitamin C, potassium and other nutrients. It is low in calories and has health-promoting properties, including aiding digestion and possible antioxidant effects.
Fennel is available all year round and can be purchased at markets, grocery stores or directly from farms.
To preserve its freshness, fennel should be kept in the vegetable drawer of the fridge and washed thoroughly before eating.
Versatility in the kitchen:

Due to its mild and aromatic flavor, fennel can be prepared in a variety of ways, whether raw in salads, roasted as a side dish or braised in stews and sauces.
