The quince, also known as "membrillo" in Spanish, is a yellowish fruit closely related to apples and pears. It is often used to prepare "Membrillo", a sweet, jelly-like jam or paste popular in Spanish and Portuguese cuisine.

Quince properties:

Appearance and texture:

Quinces have a rough, golden-yellow skin and are often slightly larger and firmer compared to other fruits.
When eaten raw, they are inedible due to their rough texture and high content of tannins and astringents.
Preparation for Membrillo:

Membrillo is traditionally made by cooking and reducing quinces with sugar until a dense, sweet paste is formed.
This paste is often poured into rectangular shapes, cut and served as an accompaniment to cheese or used as a sweet spread for breads and pastries.
Taste and Use:

Membrillo has a sweet, intense flavor and a firm, jelly-like consistency. It has a pronounced quince flavor that is very characteristic.
It is often served as an accompaniment to cheese, especially Manchego cheese, giving it a sweet contrasting note.
Availability and storage:

Quince is usually available in autumn. The paste can be preserved in jars and stored for long periods of time.
Health Benefits:

Quinces are rich in fiber, vitamin C and antioxidants. Their use in diet can provide health benefits.
Membrillo is a delicious delicacy in Spanish and Portuguese cuisine, valued for its distinctive flavor and versatility in various culinary preparations.
